Question from Maggie On your answers to "Ask Amy", you mention a pumpkin and brie dual soup you prepared. Could I please have the recipes for those soups? Had a pumpkin soup in Jamaica and have never found a recipe. Of course, liked the concept of the dual soups. Elegant presentation. Thanks, Maggie
Amy's Response Hi Maggie-
Thanks for watching - and for your email! The pumpkin soup recipe that I use is from Crisco. It has a fun option of serving the soup in a mini pumpkins. Click here for recipe for Pumpkin Soup.
Here's my Brie Soup recipe. Disregard the apple and almond garnish if you prepare it as a dual soup with the pumpkin. Use broth or cream to get the soups to the same consistency. You may need to add more brie for thickness, too.

I have been listening to your show on Q102 on Sunday mornings and have just recently been watching your show on Wednesday nights. I am a single gal and was wondering if you could do a show on cooking for one or if you had any ideas for easy meals for one person. After working all day, it would be nice to be able to fix a quick, healthy meal without all the mess and time spent cooking in the kitchen. Any ideas? Thanks.

Thanks for listening- and watching! I'm getting more and more requests for "cooking for one" info. I'll try to get a class on the schedule at EQ this summer.

Though it may sound counterintuitive, I'd suggest you cook more than you need on a regular basis. Cooking in quantity should make most of your meals go together faster. Your freezer becomes a wonderful kitchen tool! Here are some general tips:
• Cook full sized recipes that can be broken down into single-size portions and frozen for future meals. Healthy dishes like soups, chilis and stews make great choices. Tacos fillings made with beef or turkey freeze well, too. Cook once, and you'll have 4-6 meals ready to go in the freezer. You may have heard me talk about how much I love vacuum sealers- they work great for packaging food in individual portions for the freezer- and you can often re-heat right in the bag. Click here for the link.
• Share cooking duties with other singles and swap out dishes. One night a month one the group hosts a "swap night"- kind of like a cookie exchange- where each member brings a dish that has been portioned into individual meal sizes. Members leave with a variety of dishes to pop in their freezers.
• Entree salads are great. Pre-chop lots of vegetables to toss into pre-washed salad mixes and then top it with sliced, grilled chicken or fish. If you don't have a grill, try a grill pan for stove top grilling. You can grill up a chicken breast in no time flat. Grill an extra one for a quick wrap or quesadilla the next night.
• Fish can be purchased in single portions and cooks up so quickly. Today's Enquirer has a terrific list of 40 quick fish recipes. Cooking methods include grilling, broiling, baking- even microwaving. Click here for the link to the article.

Here’s the much-discussed dressing from my “Chop Chop Salad” recipe in “Amy’s Table: Food for Family and Friends”

1/2 cup balsamic vinegar
1 tablespoon Dijon mustard
2 tablespoons chopped fresh herbs or 1 tablespoon dried ( use a mixture of basil, oregano and thyme)
1/2 cup olive oil
Salt and pepper to taste

In the bowl of a blender or food processor, combine the vinegar, mustard and herbs. Process until well combined. With the motor running, add the oil in a steady stream. Season to taste with salt and pepper.

Enjoy your show when I can catch it. Recently saw featured Madison's Market/Madisono's...re: gelato. Where exactly cqan we get it? Went to Madison's Northside & the palce closed a while ago. Asked in Glendale & owner of store we stopped at didn't know where it was & hadn't heard of place?!
We'd love to get some but can't locate where it's sold! HELP would be appreciated.

Amy's Answer Hi John, Thank you so much for your email- it means a lot to all of us who work on the show! Chef Paul Dagenbach is so talented and his soup (and ideas) really did inspire me to pursue my career in food. It's my hope that Amy's Table inspires others in the same way.
I have a story about Paul's soup. I was honored to prepare a charity dinner for the Houston Symphony at my sister's home at which the conductor, Hans Graf, was the guest of honor. I made a variation of Paul's Dual Soup, using Pumpkin and Brie soups, for a 1st course.
Months later when Maestro Graff came to Cincinnati to guest conduct, he treated my husband and me to the performance and invited us back stage afterward. As he kissed my hand, my husband said "That must have been some soup". And it was. Another nod to Chef Paul Dagenbach for having a positive impact on my life!

Tip from Sandie Several weeks ago you talked about bringing your own bags with you when you grocery shop. I tried to call in then to tell you that Kroger has been offering a $.05 credit for each bag you bring in and use for YEARS! Not all the cashiers know the code, it's "49 enter". I've had to instruct many of them over the years. I keep extra bags in my car and am in the habit of carrying them in with me. Sometimes the cashiers, usually the kids, want to give you credit for ALL the bags you brought in. I tell them to only count what I use. I don't want to abuse it because then it might stop.
Just wanted to let you know, so you could let your listeners know.

His "factory" is not a retail store, but you can find his gelato at several gourmet shops, including The Party Source in Bellevue, KY. Question from Sheryl Hi, Amy. My husband and I love listening to your show each Sunday morning on our way to Church. I heard you talk about the superfoods but I cannot locate the list . I have printed off the list of recipes and cannot wait to make a few of them. I have already been using the flax seed and have found that grinding it in a coffee grinder helps to incorporate it into recipes rather nicely. I like your idea on spinach. Thank you for your ideas.
